The National Food Institute at the Technical University of Denmark (DTU Food) invites applications for a PhD position within the research field of beer brewing. The successful applicant will be based in the research group for Microbial Biotechnology and Biorefining. One of the focus areas of the research group is brewing. We aim to improve the understanding of all aspects of the brewing process, with special interest in the mashing process, fermentation, processing and application of brewing by-products.
Responsibilities and tasks
The overall objective of the PhD study is to use a Beeromics strategy to understand how changes in raw materials and processing effect beer composition and properties. The study will help to answer the question of how changes in raw materials (e.g. barley) due to environmental changes lead to changes in properties of the beer. This will involve profiling of desired and undesired compounds and chemical changes from the raw materials to the finished product and ways to control these. This includes, for example changes in starch structure and how to mitigate these. A further part of this mapping is the formation and transfer of undesired chemicals through the production chain and their impact on the following steps and eventually for the consumer for example formation of harmful chemicals like acrylamide, PAH, mycotoxins ethylcarbamates but also residues of pesticides and migration from contact materials.
You will collaborate closely with other researchers at DTU Food as well as researchers at the Centre for Nutrition and Food Sciences at University of Queensland, Australia, and it is expected that you will work at both places during the PhD study.
Qualifications
Candidates should have a master's degree in engineering, food science or biotechnology related sciences or a similar degree with an academic level equivalent to the master's degree in engineering.
The ideal candidate has:
- Knowledge about brewing and brewing analytical procedures
- Experience with analytical chemistry and LC-MS/MS
- Knowledge about enzymes
- Good laboratory skills
- Good collaboration and communication skills (written and oral English)
- Structured and analytical working approach

The scholarship for the PhD degree is subject to academic approval, and the candidate will be enrolled in one of the general degree programmes at DTU. Salary and appointment terms
The appointment will be based on the collective agreement with the Danish Confederation of Professional Associations. The allowance will be agreed upon with the relevant union. The period of employment is 3 years.
