PhD scholarship in Thermal Processing of Seaweeds and the Effects on Quality and Safety

The National Food Institute (DTU Food, Denmark) and Norwegian University of Science and Technology (NTNU, Norway) invite applications for a joint alliance PhD position resulting in a double degree (DTU and NTNU). The successful applicant will be employed at DTU and will spend at least 1 year at each institute during the 3-year PhD position.

The PhD student will be involved in multidisciplinary research encompassing the areas of food technology and processing, modelling of thermal food processing, food microbiology, food safety, analytical and food chemistry and sensory science. The project will involve collaboration with industry and contact to the national food authorities.

Responsibilities and tasks


The overall aim of this PhD project is to study the production of controlled, consistent, stable, and safe seaweed products for human consumption through the development of a thermal processing model that considers different variables and parameters relevant for the seaweed food industry. In addition, the research will include the optimization of nutritional composition, sensory properties and product safety.

Within the PhD project you will:

• Be responsible for your own research, supervised by experienced and engaged supervisors in a collaborative environment,
• Perform interdisciplinary research within the broad field of food technology to investigate multifaceted aspects of seaweed as a food,
• Engage in collaboration with industry, and set up experimental designs and systematic sampling plans for the creation of statistical valid data,
• Contribute to new knowledge for the benefit of the industry and national food authorities, and support current European and international ongoing work on good manufacturing practices for post-harvest seaweed treatment.

Qualifications

Candidates should have a two-year master's degree (120 ECTS points) in the field of Food Engineering/Technology/Science, chemical engineering or related areas, or a similar degree with an academic level equivalent to a two-year master's degree.

Furthermore, the ideal candidate has:

• Knowledge on seaweed as a food
• Some experience with downstream processing of seaweed
• Experience in more than one of the following areas of food technology: modelling of food processes, food microbiology, food nutrition, sensory science, and trace metals
• Good laboratory skills
• Good collaboration and communication skills (written and oral English)
• Structured and analytical working approach
• Skills within scientific paper writing and statistical analyses of data

The scholarship for the PhD degree is subject to academic approval, and the candidate will be enrolled in one of the general degree programmes at DTU. Salary and appointment terms


The appointment will be based on the collective agreement with the Danish Confederation of Professional Associations. The allowance will be agreed upon with the relevant union. The period of employment is 3 years.
