The National Food Institute (DTU Food) invites applications for a PhD position in lipid oxidation in high fat omega-3 delivery emulsions. The successful applicant will be based in the research group for Bioactives – analysis and applications, Division of Food Technology at DTU Lyngby Campus. The research group has research on lipid oxidation in foods enriched with omega-3 fatty acids as one of its focus areas. The PhD project is part of a larger project funded by the Danish Research Council, which aims at developing new technologies to study the progression of lipid oxidation in emulsions, developing new emulsifiers with antioxidative properties and obtaining an improved understanding about the oxidation mechanisms in emulsions and finally to develop delivery emulsions for omega-3 fatty acids, which can be used for incorporation into foods with high oxidative stability. The successful candidate will work closely together with a PhD student and post doc at Aarhus University, who are also employed on this project. Responsibilities and tasks The PhD study will focus on development of oxidatively stable high fat delivery systems with high content of omega-3 fatty acids. For this purpose the PhD student will use emulsifiers with antioxidative properties developed by the PhD student at Aarhus University. The PhD student will spend 6-8 months at Penn State University in USA to work on EPR spin trapping measurements of lipid oxidation kinetics. Moreover, a research stay at INRA in Nantes is also expected. In the final part of the PhD study the student will test the delivery emulsions in real food products. Qualifications The candidate is a motivated scientist with relevant experience from master study. Ideally, you have a master in food science/technology, chemical engineering, analytical chemistry or equivalent. Furthermore the ideal candidate has: •Knowledge about lipid oxidation in emulsions •Experience with HPLC •Experience with GC-MS •Good laboratory skills •Good collaboration and communication skills (written and oral English) •Structured and analytical working approach The candidate must be willing to spend 6-8 months in US and possibly also 2-3 months in France. Approval and Enrolment The scholarships for the PhD degree are subject to academic approval, and the candidates will be enrolled in one of the general degree programmes of DTU.
